Let's start the month of February with a tasty recipe based on Matcha tea!
When we think of the many Italian desserts, among the most classic we definitely find the panna cotta: usually served with caramel, chocolate, or sweet berries, this dessert is an integral part of Italian culinary tradition.
But today we want to propose it to you in a more oriental and healthy version: enriched with Matcha powder and 100% vegan! In fact, we will replace the milk and gelatin, usually used in the traditional recipe, with a non-dairy milk and agar agar, a valid alternative to regular gelatin.

How to prepare Matcha tea panna cotta
Ingredients:
- 300ml of soy milk
- 1 tablespoon of Matcha (buy it here!)
- 400ml of water
- 2g of agar agar
- 7 teaspoons of sugar
In a saucepan, heat the milk until it is warm. Make sure not to bring it to a boil!
In a bowl, mix the Matcha powder and a portion of the warm milk, using a chasen. At this stage, add the milk gradually to avoid lumps and achieve a homogeneous mix. Once you have a fairly creamy paste, add it to the remaining milk and mix well, then set aside.
In a clean saucepan, add water and agar agar bringing them to a boil. Then cook for two minutes until the powder is completely absorbed. At this point, add the sugar and mix well.
Now you need to add the milk and Matcha tea mix to the water mix, heat for a few minutes, and turn off the heat.
Now take some molds or serving glasses where you will serve your panna cotta and strain the mixture using a sieve. Place in the fridge for about two hours.
Once ready, it's up to you! You can decorate your panna cotta with fresh fruit like mango or strawberries, or pair it with dark chocolate shavings.
