Coffee from around the world: Cafe de Olla

Long live Mexico! Today our journey to discover coffees around the world takes us to South America where we find the coffee de Olla, literally coffee in pot. Consumed hot, it is typical of small villages in the cold climate of central Mexico and the recipe involves the fermentation of coffee together with sugar and cinnamon, which are not simply added to the already prepared drink.

The result? A drink with a sweet but at the same time spicy taste! Discover the recipe to prepare the coffee de Olla!

How to prepare Café de Olla

Ingredients:

– 227gr dark roasted coffee

– 113gr of water

– 1 stick of cinnamon

– peel of an orange

– 141gr of Piloncillo

In a small pot over medium heat, add the coffee and water along with the orange peel and the Piloncillo. The latter is often used in Mexican cuisine as a sweetener and is less known to us. If you can't find it in your trusted supermarket, you can substitute it with raw cane sugar.

Bring to a boil until the sugar is completely dissolved. Remove from heat and let it rest for five minutes. Once the resting time is over, strain with a sieve and serve.
